Pineapple Coconut Smoothie
We love using frozen pineapple! It’s more convenient than fresh, since it’s already peeled and diced. And the fact that it’s frozen makes it ideal for this recipe, where it gives the smoothie that slushy texture we crave.

Blender (adult needed)
2 glasses
- 3/4 cup plain yogurt, milk, or coconut milk
- 1 large overripe banana, sliced (and frozen, if possible)
- 1 cup frozen pineapple chunks
- 2 tbsp unsweetened shredded coconut
Put all the ingredients in the blender.
Put the top on tightly. Turn on the blender to medium speed and blend until the mixture is smooth, 30 to 60 seconds.
Pour the smoothie into the glasses and serve right away, or cover and refrigerate up to 4 hours.
