Creamy Cucumber Salad
This is an easy side dish that goes well with lots of different main courses. It’s also good to bring to a picnic or potluck.
- 1 large English cucumber or 2 traditional cucumbers washed and peeled
- 1⁄4 cup plain yogurt
- 1 tablespoon rice vinegar or fresh lemon juice
- 1 tablespoon finely chopped fresh mint, dill, or basil leaves
- 1⁄4 teaspoon salt
Cut the cucumber into thin rounds and put them in the bowl.
Add the yogurt, vinegar, herbs, and salt to the bowl and mix well.
Serve right away or cover and refrigerate up to 2 hours.
