Creamy Avocado Dip
This is a light and creamy avocado dip, different from the more commonly found guacamole – just right for topping tacos or sandwiches, or for snacking on with a pile of raw vegetables.
- 1 ripe avocado
- 1⁄4 cup plain yogurt
- 1⁄4 cup chopped fresh basil or cilantro leaves, or a combination
- 1⁄2 teaspoon fresh lime or lemon juice
- 1⁄4 teaspoon kosher salt
Put the avocado on its side on a cutting board. Using a large, sharp knife carefully cut the avocado in half by running the knife through the stem end and around the large pit. Twist the halves to separate and remove the pit with a spoon.
Use the spoon to scoop out the avocado flesh and put it in the bowl. Mash the avocado with the fork.
Add the remaining ingredients and stir well.
Serve right away or cover and refrigerate up to 2 hours.
