Toasty Blueberry Smoothie

Toasty, creamy, and tangy — this protein-rich shake tastes a lot like cheesecake! But, unlike most desserts, it’s full of ingredients that will give you lots of energy for your day.

  • Measuring cup
  • Measuring spoons
  • Grater or zester (adult needed)
  • Citrus squeezer (if you have one)
  • Blender (adult needed)

Ingredients
 

  • 1 cup frozen or fresh blueberries
  • 1 cup milk or plain yogurt or a combination
  • 1⁄4 cup toasted pecans
  • 1 teaspoon vanilla extract
  • Juice and grated zest of 1/2 lemon
  • 2 dates

Instructions
 

  • Put all the ingredients in the blender.
  • Put the top on tightly. Turn on the blender to medium speed and blend until the mixture is smooth, 30-60 seconds.
  • Divide the smoothie equally between 2 glasses and serve right away, or store in a thermos or covered in the refrigerator, up to 4 hours.

Notes

* If you’re allergic to nuts, substitute 1⁄4 cup toasted wheat germ, oats, or sunflower seeds for the pecans.
