Old-Fashioned (Eggless) Egg Cream

“Egg cream” is a funny name for a drink that contains neither eggs nor cream! Instead, it’s an old soda-fountain favorite from New York City: a light, frothy mixture of flavored milk—chocolate or vanilla—mixed with cold bubbly water. You stir it all together until the liquid foams up into a frothy head at the top of the drink, and then drink it before the foam deflates.

Ingredients
 

  • 1⁄2 cup cold milk
  • 1 teaspoon maple syrup
  • 1 teaspoon vanilla extract
  • 2⁄3 cup cold bubbly water

Instructions
 

  • Put the milk, maple syrup, and vanilla extract in the glass and stir them with the spoon until blended.
  • Add the bubbly water and stir vigorously until the drink foams up a lot and has a frothy head. Drink right away, while it’s still foamy.

Did you know?
In New York City, bubbly water is called “seltzer.” Since the early 1900s there have been “seltzer men” who make door-to-door deliveries of carbonated water in crates of glass siphon bottles (bottles that carbonate the water as you spray it out of a nozzle). Seltzer men drive trucks now, but they used to deliver by horse and cart!
