National Grapefruit Month

Here at ChopChop, we celebrate healthy and delicious food everyday.  We love when there’s even more reason to celebrate, with a wacky, fun food holiday.  February has many food holidays and ChopChop will be celebrating all month long. We’ll be giving you ideas on ways to celebrate with us and of course, some recipes to try with your family!

February is National Grapefruit Month.  Grapefruit is one of our favorite citrus fruits.  These two grapefruit recipes are totally different-one will warm you up and one will cool you down.  Try them both and let us know which you like best!

GRAPEFRUIT GRANITA

It’s hard to imagine that just freezing and stirring grapefruit juice can so fully transform it into a frozen dessert—but it does! Grapefruit is a great fruit for a granita, but you can try almost any juice, particularly citrus. Just like oranges, grapefruit are an excellent source of vitamin C.

HANDS-ON TIME: 15 MINUTES

TOTAL TIME: 2 HOURS

MAKES: 3 CUPS

KITCHEN GEAR:

Measuring cup
Measuring spoons
Shallow pan
Spoon
Fork

INGREDIENTS

3 cups grapefruit juice (either store-bought or squeezed from around 4 medium-sized grapefruit)

1⁄4 cup maple syrup, honey, or brown sugar

INSTRUCTIONS

Wash your hands with soap and water, then gather all your kitchen gear and ingredients and put them on a clean counter.

1.     Put the juice and maple syrup, honey, or sugar in the pan and mix until combined. Carefully put the pan in the freezer.

2.     Using a fork, stir every 15 minutes until frozen, about 2 hours. After 2 hours, serve, or cover and freeze in individual portions for up to 2 weeks.

NOTES

Fancy That! Top each serving with 1 tablespoon finely chopped fresh mint leaves

Did you know? The word granita shares the same root as granular, because the frozen dessert has a grainy texture.
