Siena Farms Kids’ Share 2016, Week 1: Tomatoes, Tomatoes, Tomatoes!

For the third season, ChopChop Kids and Siena Farms have continued a partnership to bring families together in the kitchen! With the Siena Farms Kids’ Share, kids get their very own vegetables for 12 weeks in a special quarter-bushel Kids’ Share box.

Each week’s share is filled with produce, recipes from Siena Farms and ChopChop, and a surprise—like this week’s copy of ChopChop Magazine! For the next 12 weeks, we will be blogging about what we cook with our Kids’ Share box and sharing some recipes as well!

Tomatoes were definitely the theme of this week’s box, which was filled with many types and colored tomatoes: from heirloom to cherry, and purple to green. Additionally, the box included scallions, a green bell pepper, jalapeno pepper, mint, and a cucumber. After looking through the recipes from the box, the Hot-n-Cool Salsa seemed like the perfect recipe for a summer day. Of course, there were extra tomatoes, so we also made ChopChop’s Quick & Easy Tomato Sauce.

Hot-n-Cool Salsa

Makes about 4 cups

Ingredients:
3 cups diced tomatoes (any color, ¼-inch dice)
1 cup peeled, diced cucumber (1/4-inch dice)
¼ cup diced bell pepper (stems, ribs and seeds removed; 1/8-inch dice)
½ cup chopped scallion, white and green parts
6 tablespoons minced mint (leaves only)
½-1 teaspoon minced jalapeno pepper
½ teaspoon ground cumin
1 clove garlic, minced or grated
2 tablespoons white wine vinegar
2 tablespoons lime juice
¼ teaspoon salt (more to taste)

Instructions:
1. Put all the ingredients into a big bowl and mix well. Taste the salsa, add more salt, vinegar, or lime juice, if you think it’s needed.
2. Cover and let stand for 20 minutes (if you can wait that long), so that the flavors have time to blend.
