kitchen gear

  • Strainer or colander
  • Food processor (if you have one)
  • Measuring spoons
  • Measuring cup
  • Spatula or large spoon

Ingredients

  • 1 (16-ounce) can white beans, drained and rinsed with cold water
  • 1 to 2 garlic cloves, peeled and chopped
  • 1⁄4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • pinch salt

Instructions

  • Put the white beans, garlic, oil, and lemon juice in the food processor fitted with a steel blade and process until completely smooth.  (If you don't have a food processor, you can mash everything using a fork or potato masher. It won't get as smooth but it will definitely be yummy!) If you are adding any extra spices, do it now.
  • Spoon into a serving bowl, cover and refrigerate at least 1 hour and up to 2 days.

Notes

FANCY THAT!
If you want to get creative, here are some things to add to this recipe: fresh basil, parsley, cilantro or chives, chopped or pureed olives, chili peppers, chopped shallots, or you can swirl in pesto or olive paste.
