Maple Cream Cheese Icing (for Carrot Cupcakes)
Use this icing to top your Carrot Cupcakes.
3⁄4 cup low-fat cream cheese at room temperature
1⁄4 cup low-fat greek or plain low fat yogurt
2 tablespoons maple syrup
- Put the cream cheese, yogurt and maple syrup in a small bowl and mix until smooth.
- When the cupcakes are completely cool, use the table knife to swirl a bit of icing on each one.
- Serve right away
