Green Salad with Homemade Dressing and Croutons

A green salad goes great with any kind of meal. Or turn it into the main event by topping it with grilled chicken, canned tuna, or, as Kids Advisory Board member Owen Osborne does, marinated tofu. “This was so fun,” he told us. “Salads are an easy way to eat your colors and try multiple vegetables at once.

kitchen gear

  • Cutting board
  • Sharp knife (adult needed)
  • Large bowl
  • Measuring cups
  • Tongs

Ingredients
 

  • 1 (5-ounce) package baby spinach or lettuce mix
  • 1 English cucumber (the long, thin kind wrapped in plastic),diced
  • 2 carrots, scrubbed or peeled and sliced
  • 1 tomato, cored and diced, or 1 cup cherry tomatoes, halved
  • 1/4 cup Homemade Salad Dressing, or more if needed
  • Do-It-Yourself Croutons

Instructions
 

  • Put the greens, cucumber, carrots, and tomato in the bowl and toss well.
  • Add half of the dressing and toss again. Taste a piece of vegetable. If it needs more dressing, add it and taste again.
  • Add the croutons and serve right away.

Notes

GET CREATIVE

Try adding any or all of these extras to your salad:
  • 1 cup shredded red cabbage
  • 6 radishes, sliced
  • 1 bell pepper (any color), seeded and sliced or diced
  • 4 pickled peppers, such as pepperoncini
  • 2 scallions, root ends trimmed off, greens and whites sliced, or 2 tablespoons chopped red onion
  • 1/2 cup canned chickpeas, drained and rinsed
