Frozen Mango Sherbet
We just love a two-ingredient recipe! Especially one that’s this tasty and refreshing. If you’ve never turned frozen fruit into a creamy dessert before, prepare to be amazed. Kids Advisory Board member Linnea served this to a member of her family who said, “It tastes like a tropical vacation.”
KITCHEN GEAR
Food processor
(adult needed)
Measuring cups
Wooden spoon
INGREDIENTS
4 cups frozen mango chunks
2/3 cup plain yogurt
INSTRUCTIONS
- Put the mango chunks in the bowl of the food processor fitted with a steel blade and process until it looks like shredded cheese.
- Add the yogurt and process again. At first it will spin around and stay icy, but keep at it, stopping the machine and using the wooden spoon to loosen the mixture if it stops moving. At some point, it will suddenly go creamy and custardy, like soft-serve ice cream. Serve right away.
TRY ADDING THIS
• 1 ripe banana, sliced and frozen, added with the mango
• 1⁄4 cup toasted nuts, chopped, added with the mango or sprinkled on top
• 2 tablespoons unsweetened coconut, sprinkled on top
