Cucumber and Peach Salad
This is a fresh, summery salad: The cucumber is crunchy and the peach is juicy, and they look so pretty together. If you want to make something more like a salsa to scoop up with chips, just cut everything into smaller pieces. When Kids Advisory Board member Te’Lario tested this for us, he said, “It turned out great!”

Ingredients
- 2 ripe peaches, pitted and diced
- 1 English cucumber (the kind that comes wrapped in plastic), diced
- 1 tablespoon olive oil
- 1 tablespoon fresh lime, lemon, or orange juice
- 1/2 teaspoon salt
Instructions
- Put all the ingredients in the bowl and stir gently.
- Serve right away, or cover and refrigerate up to overnight.
Notes
GET CREATIVE
- For an herby salad: Add 2 tablespoons chopped fresh cilantro, mint, parsley, or basil leaves.
- For a more filling salad: Add 1/2 cup crumbled feta cheese and/or 1 avocado, peeled, pitted, and diced.
- For a spicy salad or salsa: Add 1 or 2 seeded and minced jalapeño peppers.
