Creamy Cucumber Salad
This is an easy side dish that goes well with lots of different main courses. It’s also good to bring to a picnic or potluck.

- Sharp knife (adult needed)
- Mixing bowl
- Measuring cup
- Measuring spoons
Ingredients
- 1 large English cucumber or 2 traditional cucumbers washed and peeled
- 1⁄4 cup plain yogurt
- 1 tablespoon rice vinegar or fresh lemon juice
- 1 tablespoon finely chopped fresh mint, dill, or basil leaves
- 1⁄4 teaspoon salt
Instructions
- Cut the cucumber into thin rounds and put them in the bowl.
- Add the yogurt, vinegar, herbs, and salt to the bowl and mix well.
- Serve right away or cover and refrigerate up to 2 hours.
