Brown Rice Pudding

Ingredients
- 2 cups cooked brown rice
- 2 cups milk plus extra for serving
- 1/8 tsp salt
- 2 tbsp maple syrup plus extra for serving
- 1/2 tsp vanilla extract
- 1/8 tsp ground cinnamon
Instructions
- Put the rice, milk, and salt in the pot, put the pot on the stove, and turn the heat to medium.
- When the milk is very hot (steaming, but not yet boiling), lower the heat to the lowest setting. Cook, stirring occasionally, until the milk has been absorbed by the rice, 20 to 30 minutes(you’ll need to stir it more frequently as it gets closer to being done)
- Add the maple syrup, vanilla, and cinnamon and stir well. Set aside to cool a little, then serve topped with extra milk, maple syrup, and cinnamon, or cover and refrigerate up to 2 days and serve cold.
Notes
Get creative! Top each bowl with:
- 1 tablespoon chopped toasted walnuts, pecans, or almonds
- 1 tablespoon raisins or other dried fruit
- 1/4 cup fresh or frozen berries
- 1/4 cup chopped apples or pears
