Baked Granola Peaches

Top peach slices with a crunchy oat crumble, then bake them up into a delicious dessert. This is a great recipe for peaches that are not completely ripe or perfect because cooking concentrates the flavor and sweetness of the fruit. Kids Advisory Board member Liana Joy says, “The sweet crumble and fresh fruit make a great combo!”

  • Sharp knife (adult needed)
  • Measuring cups
  • Measuring spoons
  • Medium-sized bowl
  • Fork
  • Muffin tin, 8-inch square baking pan, or pie plate
  • Metal spatula
  • Pot holders

Ingredients
 

  • 1/2 cup old-fashioned oats
  • 1/2 cup whole-wheat flour
  • 1/2 cup chopped walnuts, chopped pecans, or sliced almonds (if you're allergic to nut, skip them)
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 tablespoons vegetable oil or melted unsalted butter
  • 3 tablespoons maple syrup or honey
  • 4 ripe peaches, halved, pitted, and sliced, or 1 (16-ounce) bag frozen peach slices

Instructions
 

  • Turn the oven on and set the heat to 350 degrees.
  • To make the topping, put the oats, flour, nuts, cinnamon, and salt in the bowl and mix well.
  • Drizzle the oil or butter and maple syrup or honey over the oat mixture and use the fork to mix until it is crumbly.
  • Put the peach slices in the muffin tin, baking pan, or pie plate.
  • Sprinkle the topping evenly over the peaches.
  • Once the oven temperature has reached 350 degrees, put the pan in the oven and bake until the peaches are bubbling and the topping is crisp, about 30 minutes (or 45 minutes if your peaches are frozen). Set aside to cool a bit, then serve.
